This connects Jesus' commands in verse 26 with the whole of verse 27. The idea is "Let the most important serve because I am servant." Jesus, the most important among them, serves them, so the one who is most important among them must serve.
the one who serves
"a servant"
which is greater
"which one is greater" or "who is more important." Jesus asked this rhetorical question to introduce his answer to the apostles' question about greatness in verse 24. This rhetorical question can be translated as "I want you to think about who is greater." (rc://en/ta/man/translate/figs-rquestion)
the one who sits at the table
This can also be translated as "the one who is dining"
the one who serves
"the one who serves the food" or "the one who serves the one who sits." This refers to a servant.
Is it not the one who sits at the table?
This is also a rhetorical question. The implied answer is "Of course the one who sits at the table is more important than the servant!"
Yet I am among you as one who serves
The word "yet" is here because there is a contrast between what people would expect Jesus to be like and what he really was like. This can also be translated as "Yet I am serving you."
